Beach Picnic Food That Survives the UAE Heat

Heat and food are a risky mix. In UAE temperatures, a tray of sandwiches can go from fine to unsafe in about an hour. The right food choices and a good cooler make all the difference.

The two rules that matter

Keep cold food at 4°C or below until you eat it.
The one-hour rule: perishable food shouldn't sit out for more than two hours, or more than one hour when it is above 32°C. Most UAE afternoons from April to October are well above that.

Foods that cope well with heat

Whole fruit: apples, grapes, oranges, watermelon (cut it at the beach or keep it chilled)
Vegetable sticks with hummus kept in the cooler
Wraps and flatbreads with grilled vegetables, za'atar or cheese
Crackers, breadsticks, nuts and dates
Pasta or grain salads dressed with olive oil and lemon instead of mayonnaise
Frozen yoghurt tubes or juice boxes that thaw while you travel

Foods to keep cold or skip

Mayonnaise and cream-based salads
Cooked rice and chicken that have been sitting out
Soft cheeses and dairy desserts
Cut fruit left in the sun

Packing tips

Chill everything overnight, and pre-chill the cooler too.
Freeze water bottles to use as ice packs.
Keep the cooler in the shade and open it as little as possible.
Pack drinks in a separate bag if you can, because the drinks cooler gets opened most.

Kids' picnic: cheese and cucumber wraps, apple slices with lemon juice, frozen yoghurt tubes, water.

Mezze spread: hummus, mutabbal, vegetable sticks, flatbread, olives, dates, laban kept cold.

Sunset BBQ: marinated chicken kept frozen until you light the grill, corn, halloumi, watermelon.
